Prep Time: 15 minutes
Cook Time: 36 minutes
Serves: 12

Ingredients:
8 ounces cream cheese (softened)
4 slices thick-cut bacon (cut into 1/2-inch pieces)
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup pickled jalapeños (chopped)
1 tablespoon pickled jalapeño brine
2 teaspoons Worcestershire sauce
2 teaspoons chili powder
1/2 teaspoon garlic powder
1 pound fresh lump or claw crab meat (drained, shells removed)
3 medium scallions (thinly sliced)
8 ounces sharp cheddar cheese (shredded, about 2 cups)
1/4 cup fresh cilantro or parsley (chopped)

For serving: Baguette slices, crackers, or vegetables

Instructions:

Preheat your oven to 375°F.

Cook the Bacon
In a skillet over medium heat, cook the bacon pieces until crispy (4-6 minutes).  Remove the bacon  and set aside. Discard the bacon grease or save in a Mason jar for future recipies.

Mix the Base:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth (about 1 minute).

Add More Ingredients:
Add the sour cream, mayonnaise, chopped pickled jalapeños, jalapeño brine, Worcestershire sauce, chili powder, and garlic powder. Mix on medium speed until light and fluffy (about 3 minutes).

Combine the Mix:
Fold in the bacon, crab meat, scallions, and 1 cup of shredded cheddar cheese. Mix gently until combined.

Assemble the Dip:
Transfer the mixture back to the skillet (or an oven-safe dish). Spread it evenly and top with the remaining cheddar cheese.

Bake the Dip:
Cover the dish with aluminum foil and bake for 30-35 minutes. If you want a browned top, uncover the dish and broil for an additional 2-4 minutes.

Garnish and Serve:
Sprinkle with chopped cilantro or parsley before serving. Serve warm with baguette slices, crackers, or vegetables.

Notes:

Equipment Tip: A hand mixer works if you don’t have a stand mixer.

Make-Ahead Tip: Prepare and refrigerate for up to 2 days before baking.

Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven at 375°F for 20 minutes or microwave in 30-second intervals.
